Secure What Is Yours With a Good Fence

My my, aren’t these paleo bliss balls the prettiest things you’ve ever seen?  Or maybe the second prettiest thing behind  (may it rest in peace). I like to think of these as a sister recipe to my popular  , and I’d say the two are the perfect combination if you’re entertaining or need a quick snack for an event.

We recently rearranged our living room, which may not sound particularly exciting but at this stage in my life, I absolutely live for “home innovations” (being this openly lame is truly liberating). It looks like I’ve found a much better home photography setup as I now have two white walls to work with instead of just one, so I’m able to reflect the natural light really nicely. As someone who knows very little about photography and stumbles through every shoot with very little knowledge of what I’m actually doing, this is pretty exciting.

You probably thought I’d make Cherry Ripe bliss balls next, but my cherry addiction was clearly getting out of hand so I decided to mix things up and go with raspberries and coconut, using my go-to Australian macadamia nuts as the base. These came together beautifully! They do require a little more care than my cacao balls, as they include fresh raspberries. This means the mix can be a little more wet and sticky, so the balls can be slightly more challenging to “roll”. I recommend using the sharper edge of the food processor to scrape the mix off your hands as you roll each one. This will clean your hands of the sticky mix, and will make it easier to get that perfectly round shape.

Raspberry coconut paleo bliss balls 2015-06-16 16:45:23 Yields 16 Write a review Print Prep Time 10 min Cook Time 1 hr Total Time 1 hr 10 min Prep Time 10 min Cook Time 1 hr Total Time 1 hr 10 min Ingredients 1/2 cup raspberries, washed and dried thoroughly 8 medjool dates 1.5 cups raw macadamia nuts 4 tablespoons cashew butter 1.5 teaspoons pure vanilla extract 2 tablespoons grade B maple syrup 1/2 cup finely shredded coconut, plus an extra 1/4 cup for rolling Instructions Line a tray with parchment paper and set aside. Place all ingredients except the extra 1/4 cup of shredded coconut in a food processor, and mix until a sticky dough forms. If the mixture is very wet, add a little more coconut and process again. Roll into small balls, and place on the lined tray. Place in the fridge or freezer for 10-15 minutes. Spread the shredded coconut out on a plate or cutting board. Remove the balls from the fridge and roll them in the shredded coconut. Use your hands to press the coconut in,so it sticks firmly to each ball. Refrigerate for 60 minutes. Notes These can be quite sticky, so I recommend cleaning your hands between each "roll" by scraping your hands down the side of the food processor, or a bowl.
